Goa Fish Curry
Goa Macchi Kadhi. Sweet coconut curry with a little bite! | Serves: 4-6
INGREDIENTS
1kg firm fish (like monkfish
or snapper)
4 onions
1 bunch coriander
2 lemons
2 green chillies
5 cloves garlic
1 Tbsp grated ginger
2 Tbsp vegetable oil
400g tin chopped tomatoes
450g tin coconut milk
1 tsp salt
FIRST THINGS TO DO
● Dice fish into large pieces
● Chop onions and coriander
● Juice one lemon, cut the other into wedges
● Finely chop chillies
● Crush garlic and grate ginger
TO MAKE YOUR AUTHENTIC CURRY
● Grind Mix 1 and Mix 2 and pour in Mix 3
● Add garlic and ginger, mix to form a paste
● Heat oil in a large saucepan over a medium heat
● Add onions and cook for 10 minutes
● Stir in spice paste and cook for 2 minutes
● Add tomatoes and stir
● Stir in half the lemon juice, green chillies,
coconut milk and the last bag
● Simmer uncovered for 5 minutes
● Add fish pieces and cook for a further 5 minutes
● Add a pinch of salt and remaining lemon juice
to taste
● Serve with Indian basmati rice and a sprinkle
of coriander and lemon wedges
