La tomate San Marzano est la seule tomate à détenir
l’appellation d’origine protégée (AOP). Cette dénomi-
nation est tributaire de plusieurs règles de production.
Par exemple, chaque conserve doit être identifiée par
un code assurant la traçabilité du produit, et chaque
producteur doit aussi rapporter le nombre de tomates
qu’il produit annuellement. À cet effet, on trouve un
code spécifique sur chaque conserve qui indique le
nombre de tomates produites à ce jour. The San Marzano is the only tomato variety with a
Protected Designation of Origin. This designation
implies a number of production rules. For instance,
each can must be identified by a code ensuring traceabil-
ity. Every San Marzano tomato grower must also report
the number of tomatoes produced annually. To that
effect, all cans bear a specific code indicating the
number of tomatoes grown to date.

Fait intéressant, les tomates en conserve font mentir
la règle selon laquelle la cuisson réduit ou détruit les
micronutriments précieux puisque le lycopène qu’elles
contiennent est mieux absorbé lorsqu’il a été chauffé.
La teneur en lycopène est trois fois plus élevée dans
une tomate en conserve que dans une tomate fraîche. Cooking is generally known to alter or destroy precious
micronutrients, but canned tomatoes are an interest-
ing exception: they contain lycopene, a nutrient that is
absorbed more easily after it has been heated. Canned
tomatoes have three times as much lycopene as fresh
ones.
