“NoMI Kitchen at Park Hyatt Chicago is
undergoing a transition – our Executive Chef
Ed Sura, himself a millennial, is reimagining the
idea of Midwest cuisine. Redefined, familiar and
honest food are the menu features. Ed relies on his
relationships with local farmers, butchers and fish
mongers to deliver the best quality products which
assist in telling a part of the greater story.
Our sommelier tells the other half. Another
millennial, Jillian knows her peers want wine. She’s
engineering the wine list to speak to those who want
a great bottle that you can’t get without some effort
and insider knowledge. Her pairings are spot on and
her passion for wine is infectious – you should ask to
chat with her even if you aren’t drinking wine.”
