Homemade Carrot & Roasted Butternut Squash Soup

For a quick and easy, hearty soup that will keep you warm on those cold winter nights.

Total Preparation time: 15 – 20 minutes

Total Cooking time: 45 – 60 minutes

Ingredients:

1 large butternut squash

2 medium sized carrots

500ml Vegetable stock (bought or homemade)

Dash of cream or natural yoghurt

Does he have other interests or Hobbies? Maybe you could get him something related to those. Would he be interested in brewing his own beer? Something new he’s never tried to do before, or maybe there is somewhere he has always wanted to go visit or do, maybe a track day or some other event you could both do together? Getting gifts for people is hard sometimes and I really struggle with it, but if you look at the things he enjoys and go from there you should be on to a winner. I hope this helps in getting him something, the main thing to remember is he will love whatever you get him.

1. Preheat the oven to 200°C /180°C fan / 400°F / Gas Mark 6

2. Cut the butternut squash in half and scoop out the seeds, then score the squash to allow heat to penetrate the flesh of the squash quicker.

3. Sprinkle a little salt on the squash and a drizzle of olive oil and then wrap in tin foil and place on a baking tray.

4. Place the squash in the oven for around 30 – 40 minutes or until the flesh is tender and a knife easily slides from the flesh.

5. While the squash is in the oven, peel the two carrots and chop. Place the carrots in the stock and cook for around 15 minutes or until the carrots are soft and tender.

6. Take the butternut squash out of the oven and scoop out the soft, tender flesh and add it to the carrot and stock.

7. Add a small dash of cream or natural yoghurt to give the soup a creamy texture.

8.Blend the soup until smooth and serve in a bowl with a swirl of natural yoghurt or cream on the top
