VES: DINNER 1. House sec favourite – sweet potato and chickpea stew • 1 tin chopped tomatoes • ½ tin coconut milk • 1 sweet potato • 1 aubergine • spinach • ½ can drained chickpeas • 2 tablespoons of tomato puree • 2 teaspoons turmeric • 2 teaspoons cumin • 2 cloves garlic This recipe starts by steaming chunks of sweet potato. Oil a pot or big pan and add the tomato puree, garlic and spices until bubbling. Add coconut milk, tomatoes, aubergine, sweet potato - add salt and pepper. Cook for 45 mins and then add the chickpeas and a couple of handfuls of spinach and leave for 15 more minutes. We served this for one of the ordinary meetings and it went down really well served with crusty bread. Rice or quinoa would be good too. 2. Homemade veggie burgers • 1 can black beans • 1 carrot- grated • ½ onion- diced • 3 potatoes- grated • 4 green onions- chopped • 1 cup sweetcorn • garlic salt This is a really easy recipe and is really quick to cook. Mash up the beans and add all of the other ingredients. Shape into burgers about ½ inch thick. Oil pan and add burgers, cook for 3 minutes on each side. 3. PIZZAS!! Make your own pizzas, way cheaper than ordering in and so much better for you. Asda sell really cheap pizza bases in packs of 2. Add the tomato sauce and cheese then as many toppings you need and then maybe some more cheese. Pop in the oven for about 20 minutes then ready to eat. I hope these recipes help you in some way, I know we all struggle for time and cooking food is sometimes the last thing on our mind, but its always a good idea to cook in batches, or at least make 2 portions. Its cheaper and then easier the next day when you can just grab leftovers from the fridge. Try and put aside some time on an evening or weekend and cook some lunches or dinners for the week and you will find you save loads of time in the week for doing more enjoyable things. Happy cooking.
