Culinary Arts Fundamentals Puerto Rican Food By Vicky Romero I love Puerto Rican Food because I love the flavor, unique ingredients, cultures and recipes of Spanish food. But I have one special dish called ‘Mofongo’. It is a delicious dish and the flavor is inexplicable. It’s made of greens and bananas cut diagonally into slices put in water with salt. The process to make “Mofongo” is as follows: add the slices in a hot vegetable oil until they are cooked, without toasting it. Crush the garlic and mix with olive oil well. Grind 3 slices of fried plantain. Add a bit of pork rinds and grind them. Add part of garlic with oil and mix. Serve hot with can. Eat at breakfast time with half beans and the other half of the ‘Mofongo’ and the top 2 fried eggs and crunchy bacon, it’s so delicious. Or you can eat at lunch time. Puerto Rican ‘Mofongo’ is served as a side dish for fried meat, pork chops, seafood, or even salads and rice.
