They were home to the headquarters of the municipal equestrian Academy as well as the royal haras. The reconversion of this monument steeped in history is very recent. Three years were necessary to turn this vestige into a sumptuous four-star hotel. Designed and decorated by the designer and architect duo Jouan-Manku, the hotel has 55 rooms where leather and wood create a warm and contemporary atmosphere, with details borrowed from the equestrian world. Small anecdote, the rooms were installed in the old dwellings of the grooms and other riders. “Les Haras” is more than only a hotel. The complex, built by the Ircad (Institute for Research into Cancers of the Digestive System) provides professionals with a 90 seat conference room equipped with the latest technologies. Hidden behind the 18th-century façades of the former riding school, the biocluster houses, as of this year, innovative startups in the medical and surgical field. Also located in this historic monument, the Haras brewery can accomodate up to 300 people around a menu signed Marc Haeberlin, a chief with 3 Michelin stars. The wine selection is as prestigious ; it carries the mark of Serge Dubs, who is knowned as the world’s best sommelier. The brewery has three different atmospheres : the first floor offers the possibility to taste delicious meals under the wooden roof frame that dates back to the 18th century, the yurt consists of a leather armature that recalls horse saddles, whereas the lounge bar situated on the ground floor offers a view of the majestic wooden stairway imagined by Patrick Jouin.
