The Kit
Making the Cut
Knives might seem simple, but when it comes to the cutting edge examples, behind the blade
is a wealth of experience and expertise. A knife is only as good as the material it’s made from
and the skill with which it’s been crafted. Here are just some of the brands we’re proud to stock…
I.O.Shen
J.A. Henckels
Global
For years, knife makers
have been trying to achieve
the ultimate cutting edge,
which is rated using a
Rockwell hardness scale.
However, the brittleness
of the knife has made this
impossible to produce
commercially without using
a Damascus method, which
is very expensive. I.O.Shen
have overcome this
problem by sandwiching
two softer outer layers
(Rockwell 10°) of steel with
Rockwell 62° to produce
the ultimate cutting edge.
I.O.Shen call this Triplex
Steel Technology.
All the knives in the
I.O.Shen range have used
the very latest technology
to construct a blade that is
not only amazingly sharp
but will also retain their
edge for a phenomenal
amount of time. They have
been hand sharpened to
a 15° angle, which allows
for wonderful slicing and
portion control.
Based in Solingen,
Germany, Zwilling J.A.
Henckels have been
producing the highest
quality knives for over 275
years. Famed and desired
among professionals and
hobby chefs worldwide,
Henckels are restless
innovators and tireless
perfectionists. The Henckels
message is always the same
– ‘no compromise’.
Up to 40 manufacturing
steps are taken to produce a
top quality Henckels knife,
from the ice-hardening
process the steel undergoes,
through to the precision
laser-testing of each blade.
In a world of automation
and robotics, the Henckels
factory is a remarkably
human place.
Made at metal
manufacturing company
Yoshikin, Global knives
are created from the finest
high carbon stainless steel
available for producing
professional quality kitchen
knives. Yoshikin uses its
own proprietary stainless
steel called CROMOVA 18
and this material has been
designed exclusively for
Global. The steel is hard
enough for Global knives to
keep their edge for a long
time, but still soft enough
so it’s not too difficult to
sharpen them. The CRO in
CROMOVA 18 stands for
chromium, and the 18 is the
percentage of chromium in
the steel. This high
percentage contributes
to Global’s excellent stain
resistance. The MO and VA
stand for molybdenum and
vanadium – two metallic
elements that give a knife
good edge retention.
