Cinnamon stars
Cinnamon star is a very traditional German biscuit, usually known as Zimtstrene.
Ingredients for about 15 pieces:
300 g almond flour
50 g flour
100 g sugar
2 teaspoons ground cinnamon
a pinch of ground cloves
1 teaspoon vanilla paste
2 egg whites
for the meringue:
1 egg white
1 teaspoon salt
about 100- 150 g granulated suga
1. Put the almond flour, flour, sugar, cinnamon, clove and vanilla into the bowl of a stand mixer.
2. Lightly whisk the egg whites with a wire whisk in a plastic bowl. Add to the almond mixture and mix until all
comes together into a pastry.
3. Wrap in kitchen foil and put into the fridge for at least for half an hour.
4. Before baking prepare the meringue. Put the egg white and salt into the bowl of stand mixer. Beat on medium
meanwhile add the sugar gradually spoon by spoon.
5. Preheat the oven to 170 C.
6. Take the pastry out of the fridge and roll on a slightly floured surface into 8-10 mm thick.
7. If you have a traditional star cutter, that can be opened. So just spread the meringue over the top of pastry and
cut the star shapes.
8. But if you don’t have an opened cutter, cut the star shapes and with a rubber spatula spread the meringue over
the top each by each.
9. Place the star cookies on a baking tray covered with baking paper and bake in the oven for 10-12 minutes.
10. Leave to cool completely then keep it in an airtight container.
