Cambodian SWEET & SOUR FISH

1 pound grilled white fish
3 cloves sliced garlic
• 1 tbsp chopped cilantro
• 1 tbsp spring onion
• 1 cup chopped onion
• 1 cup chopped pineapple
• 1 red chili pepper
• 1 tbsp chopped ginger
• 1 tablespoon of Khmer Sauce (recipe on opposite page)

Mama Sovong’s Khmer Sauce
Prepare 5 minutes Cook 0 minutes Serves 2 or more
1 cup fish sauce
1 garlic to taste (open the clove and leave to soak)
• 1/2 cup hot chilis cut very small (careful!)
• 1 tablespoon of lime juice
• 1 tablespoon of sugar

Method
Mix all ingredients together into a bottle and shake it up!
You don’t need to refrigerate it, and it lasts a long time.

Method
1 Heat 1 tbsp of vegetable oil in pan
2 Add all ingredients except fish and cilantro
3 After vegetables are cooked, add fish and cilantro
4 Heat through and serve
