Summer is here so invite your friends and family round and head out into the garden for a barbeque. This delicious Chilli Chocolate Ribs recipe from The Edinburgh School of Food and Wine is so easy to make – prepare the cure and marinade in advance and allow the rich chilli, chocolate, ginger and coffee flavours to infuse the meat, then simply pop them on the barbeque for the perfect party snack. Ingredients 15 pork ribs For the Chilli Coffee Cure 1/8 cup 50% kosher salt 1/8 cup white granulated sugar As many small dried red chillies as you dare! 2 tbsp ground coffee For the Ginger and Chocolate Marinade Kosher salt and freshly ground black pepper to taste 6 tbsp vegetable oil 3 cups stout 2 fingers of fresh ginger 6 tbsp rice wine vinegar 100g dark chocolate 18 informededinburgh.co.uk frozen strawberry yoghurt recipe You can’t beat a refreshing ice cream on a hot sunny day so have a go at creating this fresh and simple recipe from The Edinburgh School of Food and Wine. So easy to make, it’ll keep in the freezer for up to one month, however it’s so deliciously moreish we’re sure it’ll be long gone by then! Method Two Days Before the Barbeque 1 Prepare the chilli and coffee cure by combining the kosher salt and white granulated sugar to form a simple cure. 2 Add a handful of small dried red chillies and 2 tbsp ground coffee 3 Mix in a food processer or mortar and pestle until the mixture becomes uniform. 4 Rub the cure into the exposed flesh of the short ribs. 5 Place them into a tray to cure for 6 hours. One Day Before the Barbeque 1 Combine all the marinade ingredients and heat in a pan. 2 Pour the marinade mixture over the ribs. Method On the Dayof the Barbeque 1 Roughly chop half the strawberries. 4 Fold through the chopped strawberries. 2 Put the other half of the strawberries into a food processor and blend into a puree. 5 1 Remove the marinated ribs from the fridge. 2 Cook on the barbeque for approximately 20-30 minutes each side, keep an eye on them though as barbeques vary.
