Yogurt Tuna Roasted Spinach Pita

Makes 1 serving .
For each serving : 1 small whole grain pita loaf or lavash ( flat breads )
1 can albacore white tuna in water , drained well ( or 3 ounces chopped cooked chicken , salmon , or other fish or protein )
2 Tbsp . nonfat Greek yogurt 1 wedge of lemon Sliced Cucumbers Sliced tomatoes Sea salt and fresh ground pepper to taste
A large handful of baby spinach leaves ( or another favorite green ) 1 tsp . Extra-virgin olive oil
Preheat oven to 350 º. Arrange the pita on a baking sheet and lightly toast for 5 minutes .
Mix tuna and yogurt in a small bowl and season lightly with salt and pepper . Spread on the pita . Squeeze the lemon wedge over the tuna . Top with tomatoes , cucumber , and spinach . Season lightly with salt and pepper . Top with spinach and drizzle with oil .
Turn oven to broil and place the baking sheet on the middle shelf . Cook until the spinach is colored . Serve with a knife and fork .

Annabel is an author . She co-authored “ Eating for Acid Reflux ” in 2003 and in 2013 created all the recipes for 2014 ’ s “ Fast Diets for Dummies .” As a stylist , Annabel has assisted in countless photo shoots and tested and styled recipes for ads , articles and even a few books she didn ’ t write .
