PANCAKE FRUIT AND YOGHURT SANDWICH
Delicious , low fat pancakes should be my speciality ! Gaining at least 1 of your 5-a-day has never been so easy and tasty . You can top this mouth watering dish with anything your tastebuds desire . My personal favourite is coating them with an array of summer fruits consisting of tangy raspberries , juicy blueberries and vibrant strawberries ; mixed with a dashing of natural yogurt and finished with a drizzle of agave nectar . After all , life is all about the extra little pleasures now and then .
Ingredients : 110g / 4oz plain flour , sifted pinch of salt 2 eggs 200ml / 7fl oz milk mixed with 75ml / 3fl oz water 50g / 2oz butter
To serve : 80g Tesco Frozen Summer Fruits - Thawed 1 tasblepoon Agave Nectar or Honey 100g Fat Free Natural Yogurt
- Pour the flour and salt into a large mixing bowl with a sieve held high above the bowl so the flour gets an airing . - Make a well in the centre of the flour and break the eggs into it . Then begin whisking the eggs . ( If you don ’ t have a whisk you can use a fork !) - Next gradually add small quantities of the milk and water mixture , still whisking . - When all the liquid has been added , use a rubber spatula to scrape any elusive bits of flour from around the edge into the centre , then whisk once more until the batter is smooth . - Melt the 50g / 2oz of butter in a pan . Spoon 2 tbsp of it into the batter and whisk it in , then pour the rest into a bowl and use it to lubricate the pan , using a slice of kitchen paper to smear it round before you make each pancake . - Now get the pan really hot , ( this is vital in order to create the perfect pancake ), then turn the heat down to medium .
- As soon as the batter hits the hot pan , tip it around from side to side to get the base evenly coated with batter . Allow no more than half a minute or so to cook ; you can lift the edge with a palette knife to see if it ’ s tinged gold as it should be . - Flip the pancake over with a spatular - the other side will need a few seconds only - Slide the pancakes out on to your plate and start topping one of them with your desired fruits and yogurt - Next , place the second pancake on top , like a sandwich and top with the remainder of your fruit .
