Saturated fats found in animal protein such as red meat is debatable, and should be eaten sparingly. Bad fats are trans-fats that are the basis of margarines and reheated oil used in restaurants. Although very good for the processed food industry, hydrogenated oils directly increase the bad cholesterol, low density lipoproteins (LDLs), the chemical X factor of blocked arteries. SECONDLY, healthy complex carbs are found naturally occurring in fruits and vegetables (especially their leaves, which are also packed with vitamins, minerals and flavonoids) and should cover most of the serving plate. Foods that should not be part of our daily diet are processed sugars found almost everywhere in boxed, tinned, bottled or packaged foodstuffs: all sodas, breads, pastas, sweets, cakes, bagels, beers, and low-fat yoghurts (most have added sugar). The main culprit is high fructose corn syrup (a very sweet, dense sugar) added into low-fat food to give it a tastier flavour. There’s a strong correlation between the emphasis on low-fat food, with added sugars, and the onset of diabetes and obesity in the United States. South Africans are following this trend. SO, HOW DOES ONE ADD THESE NEW GUIDELINES INTO A DAILY DIET? FIRSTLY, it must be pointed out that a high carb diet consisting of white bread and soda (Coke, Fanta), fruit juices, sugar, and pasta may be cheaper at the shop till in the short run – but those savings evaporate in the long term due to the illnesses that they cause. A plant-based diet is much healthier in terms of stable energy levels, weight control, and a host of diet-sensitive illnesses such as heart disease and diabetes, which means less doctor and hospital visits in the long run. What is exciting is that lifestyle medicine is edging its way into mainstream medicine – not only in treatment options, and prevention, but in the magisterial idea of reversal of disease. These findings are from, among others, the work of Dr Dean Ornish, a cardiologist in San Francisco, whose team has found that the four pillars of lifestyle changes: plantbased diet, daily exercise, de-stressing (meditation), and love and intimacy, combined, can reverse heart disease (opening the blocked lumens, internal spaces, of the arteries supplying the heart muscle with oxygen and nutrients), reverse early stage prostate cancer, and reverse pre-diabetes or type 2 maturity onset diabetes. SECONDLY, there needs to be a clearout of the non-desirables from the kitchen and pantry (and any other places where they may be hidden in the house). THIRDLY, only the list of desirables should be purchased. And, to help, there are a zillion books of recipes that incorporate the new guidelines on healthy lowcarb eating.
