GUAVA ICE-CREAM This exotic fruit grows beautifully in South Africa in the cooler months. On ripening, they permeate one’s home with the most glorious smell. INGREDIENTS 12 ripe guavas, peeled ½ cup – ¾ cup sugar 250ml Orley Whip Chicken Curry Method GUAVAS cook up quickly and are a treat served with custard. 1 Poach the guavas until tender, drain and blend, and pass through a strainer (you don’t want the pips). 2 Whisk in the Orley Whip and pour into a freezer-proof container. 3 Freeze, then remove from the freezer and beat. 4 Return to the freezer to set fully.
