36 It’s Your Life I’m assuming that you’re ready to go out and buy some tomatoes, but first, a few tips before you go: • Choose tomatoes that are a deep, rich color. • Ripe tomatoes will yield slightly to pressure and have a sweet fragrance. • Choose tomatoes with no bruises, cuts, or soft spots. • Cold temperatures impede their ripening process, so store them at room temperature away from direct sunlight. • To find a larger variety of tomatoes, shop at your local farmer’s market. Now that you’ve got your tomatoes, I’ll leave you with my very favorite tomato recipe, Tomato Mango Salsa. This recipe is perfect for spring and summer. It is light and refreshing and can be served as a dip, a cold soup, or even a salad dressing.
