FOOD HEROES: THE BANDSTAND This issue we talk to Scott Stephens, Head Chef at The Bandstand in Sandown on his influences and what drives his food choices. HOW WOULD YOU DESCRIBE YOUR FOOD STYLE? Mainly British in style but I enjoy combining other countries influences. WHO HAS BEEN YOUR GREATEST FOOD INFLUENCE? It has to be Raymond Blanc. His ability to let ingredients speak for themselves & how excited & passionate he gets is very inspiring. HOW IMPORTANT IS SEASONALITY IN YOUR MENU? Very important, on the Island we have our own micro climate that gives excellent seasonal salad, vegetables & meat/game. This allows me to showcase them at their best all year round. WHAT IS YOUR FAVOURITE ISLAND FLAVOUR? It’s difficult to choose out of so many but Isle of Wight tomatoes with their variety & flavours are incredible. WHAT INGREDIENT COULDN’T YOU DO WITHOUT? Vanilla , it can be used in so many different ways not just in patisserie. WHAT WAS YOUR MOST MEMORABLE MEAL? On a holiday in Jamaica 23 years ago , I had Ackee & saltfish for breakfast .
