HOW WOULD YOU DESCRIBE YOUR FOOD STYLE ?
My style is both Mediterranean and traditional British cuisine with my own twist . I love experimenting with new dishes with seasonal local produce , aiming to bring a litle bit of the Mediterranean to the town .
WHO HAS BEEN YOUR GREATEST FOOD INFLUENCE ?
Gordon Ramsay , because he uses the best fresh ingredients to produce his own dishes . Like myself , he thrives creating his very own dishes using local produce .
WHY DID YOU BECOME A CHEF ?
I started my training at the age of 18 , working with one of the best Italian chefs in Essex . I love cooking and I believe that the secret ingredient is always passion .
HOW IMPORTANT IS SEASONALITY IN YOUR MENU ?
Seasonal produce is very important , it is the best way to create a new menu with a fantastic flavour .
WHAT WAS YOUR MOST MEMORABLE MEAL ?
Belly of pork with crispy crackling and red wine jus , in a Mediterranean restaurant in London .
