Seaview Fried Chicken
O
ne of the chefs at the Seaview
Hotel has been immortalised
as the face of Seaview Fried
Chicken. Paul Sundborg, who loves
fried chicken, has been given a comic
makeover by Pinkeye graphics and now
every bucket sold proudly has a picture
of him on the front. ‘When head chef
Bruce Theobald said he had a marketing
idea involving me I didn’t know what to
expect,’ says Paul. ‘Little did I know he was
going to turn me into the poster boy for
our fried chicken!’
Seaview Fried Chicken has joined the
best seller list in the Pump Bar. It’s made
from the whole chicken, not just the
drumsticks. The chicken is marinated
in buttermilk with a hint of chilli before
being coated in a mix of 10 different
spices. It is then cooked hot and fast in
the fryer and finished off in the oven to
avoid getting too greasy. It’s served with
homemade coleslaw and traditional shoe
string fries. Needless to say it is finger
licking good!

T
he award-winning Yates’
Brewery has launched a new
lager. The recipe, created by
Dave Yates, features a heritage variety
of hops called Saaz. The Saaz hop
imparts a wonderful fragrant aroma
whilst not being overly bitter and has
produced a deliciously smooth, light
and easy drinking lager.
Dave has been making beer for some
30 years beginning his career at Burts
Brewery. In 2000 he started his own
brewing plant, Yates Brewery and has
won a multitude of awards including
Camra Beer of the Year several times.
Isle of Wight lager is already on tap
at the Seaview Hotel and is destined
to be the drink of choice this summer.
