Recipe: Bembridge Crab Stack
Serves 4 - 6
Ingredients
1 tub of White Crab Meat (The Best
Dressed Crab)
1 large mango - peeled & diced
1 green papaya - peeled & shredded
1 clove garlic - finely chopped
1 red chilli-finely chopped
1 bunch coriander - finely chopped
Juice & zest of 1 lime
1 dessert spoon of finely chopped fresh
ginger
Method
Put all of the prepared salad ingredients
into a bowl, mix together and leave to
infuse for 4/6 hours.
To serve, arrange into a ring (approx 4
inches - pastry cutter works well). Pack
the salad down then place as much crab
meat on top as you feel you deserve.
Carefully remove the ring.
Decorate with chives and edible flowers.
Open a bottle of white wine and enjoy!
