FOOD Recipe: Bembridge Crab Stack Serves 4 - 6 Ingredients 1 tub of White Crab Meat (The Best Dressed Crab) 1 large mango - peeled & diced 1 green papaya - peeled & shredded 1 clove garlic - finely chopped 1 red chilli-finely chopped 1 bunch coriander - finely chopped Juice & zest of 1 lime 1 dessert spoon of finely chopped fresh ginger Method Put all of the prepared salad ingredients into a bowl, mix together and leave to infuse for 4/6 hours. To serve, arrange into a ring (approx 4 inches - pastry cutter works well). Pack the salad down then place as much crab meat on top as you feel you deserve. Carefully remove the ring.
