Food and drink Bacon rissoles Recipe by Woodford Butchers, Bembridge Serves: 2 Method Prep time: 20 minutes 1. Pre-heat the oven to 180/gas mark 5. Cook time: 15 minutes Ingredients 180g of finely diced streaky bacon 300g of sausage meat 1 Medium red onion finely diced Mixed herbs to taste Breadcrumbs to cover 2. Mix the sausage meat, bacon, onion and herbs in a bowl until mixed thoroughly. 3. Weigh the rissoles into 80g portions and roll until elongated. 4. Place in the fridge for 10 minutes to firm, then roll in the breadcrumbs. 5. Cook for 15 minutes either in the oven, grill or pan. www. visitilife.com 121
