There is no single person - family is our inspiration.
HOW IMPORTANT IS SEASONALITY IN YOUR
MENU?
Very important, because seasonal products reflect the
character of different times of the year and are naturally
connected to our body and mind responses. You might find
it interesting to notice how you are drawn more towards one
kind of food than to another at different times, simply because
your body naturally knows that is the right season.
WHAT IS YOUR FAVOURITE ISLAND FLAVOUR?
As Italians we really appreciate the quality of Island grown
tomatoes, which remind us of the Mediterranean flavours back
home.
WHAT INGREDIENT COULDN’T YOU DO
WITHOUT?
Definitely our ’Michelangelomade’ tomato sauce.
WHAT WAS YOUR MOST MEMORABLE MEAL?
The best meals we have ever eaten were cooked in Italy, mainly
in small places called Osteria or Trattoria: where traditions are
