WHAT WAS YOUR MOST MEMORABLE MEAL ?
Ive been lucky enough to eat in a lot of Michelin starred restaurants , but I think it has to be at The Square in London . I had a starter of Pan-fried scallops with curry spices and cauliflower , it was such a simple dish of three ingredients .

I love the buzz and the pressure of a kitchen , and because of watching Gordon Ramsey reach boiling point .
WHAT IS YOUR FOOD HEAVEN ? Lasagne and a cold beer .

WHAT IS YOUR IDEA OF FOOD HELL ?
Hard boiled eggs , Scotch eggs , Pickled eggs , or over cooked fried / poached / scrambled eggs .
WHAT ’ S GOING TO BE BIG IN 2017 ?
Personally I think ‘ fine dining ’ has had its day and now people don ’ t want pretentious food and service . People want to know what they ’ re eating and where did it come from . No more fancy words or Heston Blumenthal style cooking , its all about the ‘ meat and two veg ’ if you get my drift !
Ingredients
4 portions of cod fillet ½ Lime 30g Butter 1 large sweet potato
360 grams cooked cauliflower florets Curry spices to taste 90g finely sliced onions mixed with 2g salt ( to draw out the moisture )
100g pasta flour 5g baking powder 160ml water 3g turmeric 3g cumin 4g chilli powder
Method
1 . For the onion bhaji , mix the flour and spices together then add the onions , followed by the baking powder and then water .
2 . Cook at 180˚C in a deep fat fryer . When cooked , season and add a good squeeze of lime .
3 . Peel the sweet potato and cut into ‘ chip shape ’. Blanch till just cooked , then mix with cooked cauliflower florets and roast in oven with curry spices till golden brown .
4 . For the cod fillet portions ; rub skin with flour and curry spices , then pan fry them skin side down .
5 . When coloured finish in oven with ½ a lime and butter
6 . To serve , toss baby spinach leaves in a bowl with vinaigrette . Add in the sweet potatoes and cauliflower , arrange on a plate , then on top place onion bhajis and the cod . Finish with coriander and vinaigrette .
