Recipe: Mince Pie Cupcakes
Makes approximately 15 Mince Pie cupcakes
Ingredients
233g Margarine
233g Caster Sugar
4 Eggs
233g Self Raising Flour
4 Heaped tablespoons of sweet
mincemeat
250g Unsalted butter
1kg Icing sugar
3/4 Tablespoons of water - or as needed
Method
Cream the margarine and caster sugar,
until light in colour in a stand mixer or
with a hand mixer.
Add the four eggs and mix slowly for
two minutes. Add half of the flour while
mixing until combined, add the second
half and combine.
Add four heaped tablespoons of sweet
mincemeat, and mix on a high speed for
30 seconds.
Spoon mixture into cupcake cases - One
and a half tablespoons approx or until
two thirds full.
Bake at 160° for 17/18 minutes
approximately or until golden and
springy to the touch.
