FOOD Recipe: Mince Pie Cupcakes Makes approximately 15 Mince Pie cupcakes Ingredients 233g Margarine 233g Caster Sugar 4 Eggs 233g Self Raising Flour 4 Heaped tablespoons of sweet mincemeat 250g Unsalted butter 1kg Icing sugar 3/4 Tablespoons of water - or as needed Method Cream the margarine and caster sugar, until light in colour in a stand mixer or with a hand mixer. Add the four eggs and mix slowly for two minutes. Add half of the flour while mixing until combined, add the second half and combine.
