Sponsored by - www.holidays2remember.co.uk - FOOD - DRINK - ACCOMMODATION Recipe from Tim Morgan Vanilla Cheesecake Serves 8 20 Digestive biscuits 100g Butter 4 Large eggs 280g Caster sugar 4000g Philadelphia cheese 3 teaspoons Vanilla essence 30g Sour cream 1 Vanilla pod Base: Break the digestive biscuits into fine crumbs. Melt the butter and add to crumbs with 50g of caster sugar and mix well. Place the mixture into an 8” cake tin and spread around the base and half way up the sides of the tin. Chill for 5 minutes. Mix: Beat the cream cheese until smooth and add 90g of caster sugar and vanilla essence. Very slowly add the 4 whisked eggs to the mix. Place the mix into the biscuit case and bake at gas mark 5 / 190oC in a pre heated oven for 20 minutes. Leave to cool for 15 minutes. Mix the sour cream, remaining caster sugar and vanilla pod. (To remove the seeds from the vanilla pod, split the pod down the middle and scrape the knife along the inside). Place the mix on top of the cheesecake and bake at gas mark 7 / 220oC for 10 minutes. Cool for 6 hours before serving.
