I use island ale in the batter and all our chips are homemade and the fish is responsibly sourced,” said head chef Bruce Theobald. Since coming to the Island I have been amazed by the quality of the local fish, it has to be some of the best in the world,” said Bruce, who hopes to turn the Seaview Hotel into one of the best fish restaurants on the Island.
