T
he Beach Hut,
Bembridge is all geared
up for a busy holiday
period, having already enjoyed
a busier-then-ever first part of
the summer.
The Beach Hut has been
receiving some rave reviews,
even prompting customers
to make day trips from the
mainland, to join the locals in
sampling the delights on offer.
Planes, trains, automobiles and
boats bring their customers to
them.
Staying true to their
philosophy, this summers
menu mixes locally sourced
produce with Mediterranean
flavours to create fresh and
simple seafood dishes, fresh
salads and mezze platters.

dressed crab and lobster to
tomatoes. "As asparagus leaves
the menu, beetroot, broad
beans and courgettes follow
and then onto sweetcorn. I
love the change in season for
ingredients. We are lucky to
be small enough that I can
change things quickly. I do the
shopping. If I see something
that gets the creative juices
going I'll buy it and we'll create
something fab with it", says
Emma Guy, chef and joint
owner with her husband Jon.
"Our salads are the biggest
surprise to our customers, many
come saying they don't like salad
and leave loving ours. Herbs and
special touches such as flowers
play an important part. As do
micro herbs, marinades and my
own secret recipe dressing. The
fact most of our menu is gluten
