Food and drink FOOD HEROES: KYNGES WELL This issue our Food Hero is Tom Axford, the Head Chef and owner of Kynges Well in Brading. We talk to him about what influences and inspires his food choices HOW WOULD YOU DESCRIBE YOUR FOOD STYLE? Modern British with a classic twist, I love taking classic dishes and putting my own influence into it. WHO HAS BEEN YOUR GREATEST FOOD INFLUENCE? Tom Kerridge, Gordon Ramsey and Marco Pierre White are three great chefs, that achieve great things in their careers. I like the way tom Kerridge isn’t worried about the healthy ways of cooking. “Fat equals flavour” is so true. HOW IMPORTANT IS SEASONALITY IN YOUR MENU? Using seasonal produce in my menu is so important, every month there is something new in season, so it gives me the flexibility to use these ingredients throughout the menu and specials board. I also like to go and forage a few ingredients when they are available. WHAT IS YOUR FAVOURITE ISLAND FLAVOUR? My favourite Island flavour at the moment has to be IOW Blue Cheese. We’re very lucky to have the IOW Cheese Company just down the road from us. It’s such a soft cheese that works great with many dishes. WHAT INGREDIENT COULDN’T YOU DO WITHOUT? Salt and pepper.
