FOOD IN SEASON Wild garlic It is that time of the year when you can be walking along a path or through woodland and the captivating aroma of wild garlic wafts through the air. Wild garlic is found all over the Island. It is a bulbous, perennial plant, which can be found from late January to late spring. All parts of the plant – the bulb, leaves and flowers - are edible, and, as the name implies, it has a distinctive flavour of garlic, but not too heavy or pungent. 154 www.visitislandlife.com It does resemble Lily of the Valley plants but one rub of the leaves will identify which is which, as the former will give off a garlic scent. Leaves can be eaten raw or cooked, and make a useful addition to foods such as a cream or cottage cheese, or used in a sauce for a background hint of garlic.
