Head Chef appointed at the
Seaview wants a Michelin Star.
The Isle of Wight’s most
decorated hotel and restaurant,
The Seaview, has appointed
a new head chef as it sets its
sights on achieving a Michelin
star. Freshwater-born, Graham
Walker joins the Good Food
Guide-rated Seaview in April,
just as the hotel is set to unveil
its new look, with bedrooms
restyled by top interior
designers, Keech Green.
– both of these planting him firmly
on the road to success.
Most important to Walker is the
use of fresh local Isle of Wight
produce but he also admits to being
influenced by European trends and
will incorporate key ingredients
from the continent into his new
menus for The Seaview.
General Manager Andrew Morgan
says that the appointment “sets
us up to move forward with an
adventurous menu that combines
the best of Seaview traditions with
Graham Walker’s undoubted flair.
Our ambition is to secure a Michelin
star within the next three years,
which seems a very realistic aim.”

Graham Walker is a veteran of
Michelin-starred establishments,
starting his career at The George,
Yarmouth in 1997 before moving on
to a trio of top rated UK restaurants
as sous chef: The Black Pig, Rock;
The Vineyard at Stockcross,
Newbury and the Lords of the
Manor, Upper Slaughter.
For the past three Freshwater-born, Graham Walker
years, he has been
Sen ior Sous Chef at
The George and joins
The Seaview with two
significantcompetition
results under his belt.
He was runner up in
the Gordon Ramsay
Scholar contest and
a regional finalist in
the Roux Scholarship

sprouting),
cabbage (various green varieties),
cauliflower, morel mushrooms, wild
garlic, radishes, rhubarb, carrots,
kale, watercress, spinach, sorrel,
asparagus (towards end of the
month.) Spring lamb, wood pigeon
cockles, crab (brown, cock), Pollack,
sea bass, skate, squid.
caught his first black bream and
mackerel of the season about a
month early!
May
Asparagus, cabbage, cauliflower,
rhubarb (outdoor), carrots, wild
garlic, wild rocket, sorrel, lettuce,
watercress, broad beans, new
potatoes. Dover sole, lobster, sea
bass, skate, black bream, mackerel,
wood pigeon.
