FOOD FACTS: Courgettes are a very low calorie vegetable which makes them ideal as a ‘pasta’ replacement. They contain lutein, carotenes and are a good source of potassium and vitamin A. Nutritional yeast is dry deactivated yeast and is not a raw food as it is pasteurized. However, it has a place in raw food meals for it’s delicious ‘cheesy’ flavour and as a natural source of B vitamins and trace elements. I use Marigold Engevita Nutritional Yeast with vitamin B12.
