his is a very tasty and filling meal, which is quick to prepare. The Almond Parmesan can be stored
in a glass jar and makes a delicious sprinkle on all sorts of meals, including soups and salads. The
sauce can be frozen in portions. Only the courgette has to be prepared fresh.

are a very low calorie
vegetable which makes
them ideal as a ‘pasta’
replacement. They contain
lutein, carotenes and are a
good source of potassium
and vitamin A.
