Recipe by Wail Mubarak Steps: Madeeda Hilba Ingredients: ½ cup of vegetable oil/butter 2 tsp fenugreek (hilba) 1 tsp salt 1 tsp baking soda 2 cups flour 2 cups milk 1 cup sugar Water 1. Put oil in pot and heat until warm. 2. Add fenugreek and stir for 2 min. 3. Add 3 cups of water and salt, cover and cook until fenugreek tender (approximately 10 min). 4. Add milk and sugar. 5. Into a separate bowl mix 2 cups of flour and 2 cups of water. 6. Add to pot and stir quickly until thick (approximately 5 min). 7. Mix baking soda with 1/3 cup of water. 8. Add to pot through sieve into boiling dough which will become yellow. 9. Cover and simmer for 5 min, stirring occasionally. 10. Pour out into a bowl to cool and eat warm. 77
