Chole Bhature
Ingredients for Chole:
200 g chickpeas
1 tsp coriander powder
½ tsp red chili powder
¼ tsp turmeric powder
1 tsp garam masala/Chole masala
A pinch (optional) of asafoetida
Salt
2 large onions
2 large tomatoes
10 g ginger
10 g garlic
1 tsp cumin seeds/powder
1 tsp mustard seeds
2 bay leaves
20 to 30 ml oil
Green chili (optional)
Coriander leaves (optional)
Lemon wedges (optional)
Steps:
1. Soak the chickpeas in enough water overnight.
2. Drain the water and cook the chickpeas with fresh water and salt
until it become soft. A pinch of baking soda can help fasten the cooking process.
3. Strain the chickpeas and keep it aside.
4. Make a fine paste of onions, ginger, and garlic. Make tomato paste
separately.
5. Heat oil in a pan or wok.
6. Add mustard seeds, cumin seeds and bay leaves in the said order
into the hot oil.
7. Add onion, ginger and garlic paste into the oil and saute until it turns
golden brown.
8. Add red chili, turmeric, coriander powder, garam masala/chole
masala, and asafoetida. Saute for 30 seconds and add tomato paste.
Saute again for 1 to 2 min until it oozes out oil.
9. Add cooked chickpeas and water as per requirement of the thickness of curry. Add salt and cook for 10 to 15 min.

10. Garnish it with slit green chili, lemon wedges and coriander leaves.
