Red Lentil Soup
Turkey
Ingredients:
2 medium onions, chopped
4 large potatoes, chopped
5 large carrots, chopped
½ glass of oil
2 tbsp tomato paste
4 cups of red lentils, washed and drained
1 tbsp salt
Steps:
Parsley (fresh)
Red Pepper (optional)
1. Wash and drain red lentils, set aside.
Lemon (optional)
2. In medium sized pot, saute on medium heat onions and oil
Hot water
for 2-3 min, then add tomato paste, chopped carrots and
potatoes and saute for another 2-3 min.
3. Add red lentils and enough hot water to cover, stir well.
Simmer until carrots and potatoes are soft. Approximately
10-15 min over med-low heat.
4. Optional: with blender stick, mix soup to desired thickness.
If too thick, add more water.
6. Serve hot with fresh parsley snips and lemon juice on top.
