There are a number of apps and online applications that you can use to create some pretty amazing tessellations. Two of my favorites are:

This is a great website that lets you precisely and creatively design tessellations based on triangles, squares and hexagons.
This is an Ipad based app. It lets your create beautiful tessellations with more intricate designs.
