Barbecue Grilled Cheese Toasties

Discover a great option for your BBQ leftovers, with a golden crisp, oozing
cheese toastie.
Baked Aubergine, Halloumi and Herby Maple Crumb

Ingredients:
• 4 aubergines, halved
• Salt and pepper for seasoning
• 2 tbsp olive oil plus extra for
brushing
• 2 tbsp red wine vinegar
• 2 tbsp pure maple syrup (preferably
golden colour for its delicate flavour)
• 60g flaked almonds
• 6 tbsp natural breadcrumbs
• Handful of mixed fresh herbs,
chopped (mint, parsley and coriander)
• 450g halloumi, sliced
Method:
1. Preheat your BBQ or preheat the
oven to 160°C/Gas 4.
2. Score the flesh side of the
aubergines and season with salt,
pepper and brush with oil.
3. If using an oven, heat an ovenproof
griddle pan and brush with
extra oil. Bring to a high
temperature.
4. In a bowl, mix together the
vinegar, olive oil, maple syrup and
flaked almonds.
5. Season then fold in breadcrumbs,
followed by chopped herbs and mix
together well. Set aside and allow
ingredients to infuse.
6. Place the aubergines flesh side
down onto the BBQ grill or a griddle
pan and leave for 5 minutes, allowing
time to take on colour.
7. Turn the aubergines over and
position halloumi slices on top.
8. Spread breadcrumb and herb
mixture over halloumi and bake in
a closed bbq or in the oven for 20
minutes until browned and melting.
9. Serve with a crisp salad
TOP TIP: Be careful not to overseason
with salt as halloumi can be
quite salty.
Ingredients:
• Slices of good quality bread - sourdough works particularly well
• Butter
• Leftover BBQ meat such as gammon
• Selection of cheese; we used cheddar, stilton, brie
• Walnuts
• Chard and spring onions.
Method:
1. Butter the sourdough slices, placing the buttered side on the outside of the
sandwich add your leftover meat or charred chard and onions, top with cheese
and add the top slice of bread.
2. Place on a hot BBQ hot plate, plancha or directly onto the grill.
3. Cook for about 4 mins and turn over and cook for a further 3-4 mins
