ALL THINGS SWEET… Rather than serving a formal dessert course, the hottest trend is to forgo this and set up several mini-dessert grazing stations so guests can mingle and sample as they go. Naturally guests can flag after a large meal, but this idea encourages guests to get up and interact with each other and keeps the energy going. It also makes the transition to dancing easier as those who are less interested in dessert will be up and out of their seats and straight onto the dancefloor. Brides are demanding things like pies, petit fours, cupcakes, brownies, French macarons, and kid-friendly milk and cookies, which can be displayed in plenty of colourful combinations. Additionally, many couples are opting to have mini cakes rather than the traditional tiered wedding cake in order to give their guests plenty of variety. Top of the pops at the moment is a ‘pimp your prosecco’ area where you can mix this pleasant sparkling tipple with such items as cranberry juice, peach juice and crème de cassis for a fruity cocktail. Our favourite is a ‘Hugo’, made with prosecco, elderflower cordial and mint for a summery and refreshing alternative to Pimms, which can easily be made into a ‘mocktail’ by substituting the prosecco for soda water. You can even make your drink look beautiful, by offering gold sugar dust to coat the rims of flutes, or offering pomegranate seeds and lavender stems as accompaniments. We haven’t forgotten the gents though...with the advent of homebrewing and craft beers, many grooms are choosing to produce their own bespoke brand of beer for their wedding.
