Fish and Beer, BROADSTAIRS
Luke Scott is the new owner/chef of Fish and Beer – a uniquely styled, atmospheric bar in
Broadstairs. Trained locally at Thanet College (more years ago than he cares to remember)
insideKENT chatted to him about his new venture...
We know you
trained at Thanet
College, but where did
you go after that?
I wanted to continue
learning the trade so I
moved to London. When
you qualify as a chef, that’s
just the start of the road.
London gave me the
chance to work in a
number of quite varied
restaurants – and
under some quite varied
head chefs!
Why did you come back to Thanet?
London was great but you need space to unwind. Walking on the beach
is a good antidote to a hot, busy kitchen.
If you had to pick just three favourite places you have worked,
which would they be?
Going back to the beginning, I would have to say one of my first jobs
after college which gave me an excellent grounding in knife skills, the
newly opened Feng Sushi, Chelsea. Kent kitchens? That’s an easy one.
Absolutely The Coastguard, St
Margaret’s Bay. The owner was a
certificated ‘Master of Cheese,’ so
she taught me how to appreciate the
wide range available – especially
Kentish cheeses. Café des Amis also
rates highly on my list, which
introduced me to South American
spices – and they were a fun team
to work with.
When you’re not at work, what
do you like to eat?
You’d be surprised, I don’t eat much
but when I do I eat simply. My mum
taught me to cook pasta and rice at
an early age as she said that these
two basic, inexpensive, ingredients
are quick to cook – but can form the
basis of so many meals.
That’s the message I’m passing on
to my son, Reef. Fast food doesn’t
have to be junk food. Most pasta
dishes can be created in fifteen to
twenty minutes. Add some protein
in the form of a cheese or fish, a few
leaves and you have a perfect meal.
That’s why I love what we are doing
in the Fish and Beer – small plates
of healthy, very fresh fish and seafood.
You can get meat in any restaurant
in Broadstairs so we’ re focussing
on pescetarian and vegetarian dishes.
It’s all about offering wider choices.
Diners and drinkers are equally
welcome. You can pop in for a quick
beer or a glass of wine, or choose a
couple of dishes, cooked to order.
