CHORIZO MEATBALL SKEWERS
Planning on bringing your barbeque to life this season? With plenty of spice in the skewers
and a burst of freshness from the tangy salsa, this super simple recipe from Daniel Kennedy
of Kent Cookery School is the perfect summertime dish.
CHORIZO MEATBALL SKEWERS
with tomato and lime salsa
• 3 cloves garlic, finely chopped
• 90ml red wine
• 50g breadcrumbs
• 8 kebab skewers (soaked in water if using
wooden ones)
For the salsa
Ingredients
• 4 ripe tomatoes
• 1 red chilli (preferably Serrano or jalapeño)
• 1-2 limes
• 1 small white onion
• Small handful of fresh coriander
• Pinch salt
Method

For the skewers
Ingredients
• 500g pork mince
• 1 tsp salt
• 2 tsp smoked paprika
• 1 tsp sweet paprika
• 1/2 tsp cayenne pepper
• 2 tsp fennel seeds
To make the skewers
1. Place all the ingredients together in a large
mixing bowl and mix together well (it's a good
idea to cook a little bit in a frying pan first, to see
if it is spicy enough for you)
2. Divide the mixture into golf ball-size pieces.
Roll them into a ball and flatten slightly, then
place 3 meatballs on each skewer. When you
are done, cover and place them in the fridge for
1 hour to set

For the salsa
1. Cut the tomatoes into 4, then remove the
seeds and dice the flesh before placing in a
mixing bowl
2. Finely chop the chilli, onion and coriander and
add to the tomatoes. Add the juice of 1 lime and
season with a pinch of salt. Mix well together
and taste, adding more lime or salt if required.
Store in the fridge until needed
To finish
To cook your skewers, place them on a hot
barbeque or under a hot grill and cook for 4
minutes either side. When they are ready, serve
straight away with the salsa and some warm
tortillas or pitta bread.
