it's time for al fresco food
Summertime and the cooking is easy… Or it can be if you want it to be. Come rain or shine, once
summertime makes itself known thousands of barbecues up and down the land are pulled out of
garages and sheds, dusted off (and maybe even given a proper clean), and proudly placed on the patio.
Charcoal is purchased, gas is bought, and brand new cooking implements are found, usually right by
the checkouts. It’s time to cook outdoors.
We may not care about the weather, but it’s a matter of pride that our bangers aren’t bur nt and our
kebabs are cooked to perfection. Take a look at these great barbecue recipes and ensure your first cook

Jamaican Jerk Marinade
The Best Egg and Bacon Burger
Ideal for all kinds of meat, this spicy marinade can be
made in advance. It’s best to let the meat marinate in
it for at least 24 hours before cooking if you can.
Burgers are an essential part of a barbecue menu, and making your own patties
then putting your own spin on the extras – even the bun – can make it something
special. This recipe for the ultimate bacon and egg (and extras) burger will serve 4.
Ingredients
• 1 onion (finely chopped)
• 120g spring onions (finely chopped)
• 1 chilli (finely chopped – and you can choose whichever
variety you want, depending on how hot you want the
sauce)
• 3 tbsp soy sauce
• 1 tbsp olive oil
• 1 tbsp white wine vinegar
• 2 tsp thyme
• 2 tsp sugar
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp allspice
• 1/2 tsp ground nutmeg
• 1/2 tsp ground cinnamon
Method
1. Put all the ingredients into a blender. Blend until smooth.
That’s it!
Ingredients
• 225g bacon
(thick cut works best)
• 85g maple syrup
• 700g minced beef
• 225g cheddar cheese (grated)
• 3 tbsp Worcestershire sauce
• 3 tbsp onion (grated)
• 2 tbsp Dijon mustard
• 4 eggs
• 4 rolls/hamburger buns/brioche
(whichever you think works best)
• Olive oil
• Salt
• Pepper

Method
1. Preheat oven to 200°C and pop the bacon on a
baking tray. Cook the bacon in the oven for about
15 minutes. Take the bacon out, drizzle the maple
syrup over the top, and then put it back in the
oven for another 5 minutes. It should be nice and
crispy
2. Combine the beef, Worcestershire sauce, onion,
and mustard in a bowl with seasoning. Shape
this mixture into 4 burger patties and drizzle them
with olive oil. They’re ready to cook on the
barbecue now! About 2 minutes before they are
done, sprinkle the cheese over them and let it
melt
3. As the burgers are cooking, fry up the eggs. This
can be done on the barbecue by simply placing
a frying pan on the grill
4. Once everything is cooked, place the burger
patties, eggs and bacon into the bun and enjoy
