Coronation chicken salad – served on whole wheat Tramezzini bread cut in triangles. It’s white crustless bread thinly sliced.

These sandwiches are jammed full of chicken salad. Our guests absolutely adore the

coronation chicken!

Ingredients:

3 cups cooked chicken cut in fine cubes (to make it easy purchase pre-cooked chicken from the grocery store)

½ cup raisins

1 stick of finely-chopped celery

1/3 cup Hellman’s mayo

1/3 cup finely chopped cilantro

1/4 cup finely chopped green onions

salt/pepper to taste

granulated garlic to taste

Method:

Cut the cooked chicken into tiny cubes, add cilantro/green onions/celery/raisins and mix well. Now add mayo –add lots so that the chicken salad is creamy and not dry, then add salt/pepper/garlic to taste. Butter both pieces of your Tramezzini bread, add lots of chicken salad (the sandwiches should be really full)

Then top with second slice of bread.

Cut into triangles and most importantly don’t forget to keep them moist in the container with damp cloths on top and between layers.

Carrot and Ginger Fancy Sandwiches

Served on white crustless bread cut into heart shapes or flower shapes with a cookie cutter (open-faced), you can also spread the filling onto bread or a wrap and roll it up lengthwise to create pinwheels, these are really pretty too.
