Potato Dumplings
Ingredients:
1kg potatoes
250g potato flour
Beef Roulade
3 eggs

Ingredients: Place mashed or ground potatoes in a large bowl. Add egg,
salt and as much flour as necessary to form a smooth,
cohesive dough. Don’t overwork the dough because it will
toughen.

1 onion
3 pickled cucumbers
Put a large saucepan of salted water on to boil. On a lightly
floured surface and with lightly floured hands, roll pieces of
dough into 1/2-inch-thick cylinders. Cut at an angle into 1 to 1
1/2-inch pieces. Repeat with remainder of dough.
150g smoked bacon
3 tbsp margarine
4 tbsp oil
Drop dumplings into the boiling water (in batches, if
necessary, so as not to crowd) and return to the boil.
Reduce heat and cook for 1 to 5 minutes (remove one with
a slotted spoon to test). Using a slotted spoon, transfer
cooked dumplings to a colander and drain.

First, wash the meat and when dry, cut into thin slices.
Flatten slightly with a meat hammer, then sprinkle salt and
pepper on both sides. Lightly spread mustard on one side
of the steak. Place 1 bacon strip, a strip of cucumber and
a few onion wedges on each slice; roll up and secure with
toothpicks.
In a large deep pan, brown the beef in oil and margarine
until it is no longer pink and then drain.
Finally, cover the meat with water and bring to the boil.
Once at the boil, reduce the heat and simmer covered, for
about 80 minutes, if necessary adding more water. When
cooked, remove from the pan, drain and serve.
Royal Cheesecake
Ingredients
(for the dough)
3 glasses of wheat flour
300g butter
3 egg yolks
2 tablespoons of cocoa
1 glass of sugar
2 tbsp vanilla
2 tsp baking powder
To prepare the dough
(for the cheese layer)
1kg semi-fat curd cheese
200g butter
2 cups of sugar
2 tsp vanilla sugar
2 vanilla puddings
7 egg whites
4 egg yolks
On a chopping board, sift the wheat flour with baking powder
and the cocoa. Add the sugar, butter and egg yolks. Knead
the dough and divide it into two parts. Place one half of the
dough in the freezer so that it hardens slightly and spread
the other half on a baking tray lined with baking paper. Bake
the dough in a preheated oven (180 degrees) for about 15
minutes.
To prepare the cheese layer
First you will need to blend the cheese. In a bowl, mix the
butter with sugars and yolks. Then add the grated cheese
to the grated butter and continue to blend with a mixing
machine. Pour in the dry vanilla puddings and mix well. Whip
the egg whites and add to the cheese mixture with a spatula.
Spread the cheese layer on the baked dough base until you
have used the entire mixture. One the cheese mixture is piled
up nicely; grate the cooled dough all over the top. Preheat
the oven to 180 degrees and place the cheesecake in for
about an hour. After baking, leave the cheesecake to cool
and serve when ready.
