"I have never been speechless but when I first visited Quakers it was close. To have the honour of putting Brasserie Blanc in such buildings is quite unreal. If the Geogrian Meeting house was not enough, the two medieval halls will just stagger you. Too big for just a Brasserie, I have turned the halls into banqueting-halls. They were built in the 13th and 14th century as a monastery and then used by Bristol guilds. After further research, I discovered that the guilds involved were the Bakers' and the Cutlers'. What more could I want? I of course used the names and we now have Bakers' hall and Cutlers' hall. The Brasserie is in the old Quaker meeting hall, lovingly restored. The room is a marvel; simply built but of outstanding beauty. I just love it". Raymond Blanc
