Protein Pancakes the Whole Family will Enjoy!
A popular breakfast in our household are Protein Pancakes, this recipe is one of my faves! This is a
basic protein pancake recipe that I start with and based on what my family has a taste for I add to it!
But never forget to add the additional calories. Pictured are Pumpkin Protein Pancakes and the
additional health information is included at the bottom. I hope you enjoy these tasty, fluffy goodness.
Ingredients:
*1 cup regular or steel cut oats
*3 egg whites
*1 scoop of vanilla whey isolate protein powder
* 1 cup of fat-free cottage cheese
* ¼ teaspoon vanilla extract
* 1 teaspoon stevia
* ½ teaspoon baking powder
* ½ cup 35 calorie unsweetened Almond Milk
Directions:
1. Blend all ingredients in blender.
2. Add wet ingredients and blend until smooth.
3. Coat a hot griddle with non-stick spray
4. Pour approximate ¼ cup of batter to make 3-4
pancakes. Flip once when cake starts to bubble
Servings: Makes 4 servings of 3 pancakes
Serving size: 3 pancakes; Calories: 142; Calories from
fat: 3g; Total Carbs: 25g; Sugar: 10g; Fiber: 2g
Protein: 15g
(I chose to add ½ cup pumpkin puree this time which adds
50 Calories, 4 grams of fiber, and 10 carbs not to mention
high in vitamin A and iron)
