EATS Since I was 14 (and way before I went vegan), I saw this recipe in a French magazine, and was learning to cook for myself. It was one of the very first I tried and I was so happy with it! It was so easy to make and so tasty. Since then, I love to make it as it's the perfect summer dish! (for our southern readers) NUT FREE TOMATO AND ZUCCHINI PIE Y DAIR By Noémie from Paris by Vegan | Makes 1 pie FREE O LE PA FOR THE CRUST: E FRE VEG AN GOODNESS TEN GLU 2 ¼ cups/300 grams flour (I used coconut flour but you can use flour of choice) ½ cup/150 grams coconut oil, more if necessary 1 teaspoon salt ¹⁄³ - ½ cup ice water, more if necessary FOR THE FILLING: 4 zucchinis 10 tomatoes 3 teaspoons olive oil 5 fresh sage leaves a branch of rosemary salt to season basil 1    Slice the zucchini and steam for 20 minutes, let it cool. 2    During this time you can make the crust: Place the flour, salt, in a large bowl, combine. 3    Add your solid coconut oil and mix until it sticks together when you squeeze it. Add water and if necessary, add a little more water until the texture is right. Place in the fridge for 1 hour. Preheat oven to 400°F/200°C. 4    Use a rolling pin to roll the dough into a large circle using extra flour to keep things from sticking as you go. Place the crust in a pan. 5    Slice tomatoes, and place them, alternating with one slice of zucchini, one slice tomato etc in a spiral circle, begin at the edge of the pie and finish at the center. 6    Add olive oil, crushed sage, rosemary, and salt. 7    Place pie in oven; reduce heat to 375°F/200°C degrees. Bake for about 45 minutes or more (until topping is browned). Let cool until a little warm before serving. 8    Add a branch of basil in the center for decoration. oémie- Paris by Vegan I live in Paris, France and I switched from a vegetarian to a vegan diet about 8 month ago. My goal is to show that vegan food can look as good as any food. Lots of people think that when you’re vegan you just eat salad. But it can be really so much fun! I’m really fond of Asian food, pasta and pizza so why not make them healthier with a veggie based sauce?
