TEN GLU goodness treats NUT E FRE FREE RAW CHOCOLATE SMOTHERED COCONUT ICE CREAM Y DAIR FREE By Joelle from jarOhoney | Serves 6 E IN Y AL RG LK NE A E COCONUT ICE CREAM 3 cups organic mature fresh coconut milk SUPER FO 2 cups sun dried organic coconut meat shreds OD 2 cups water 4 tablespoons raw honey 1    In a medium sauce pan, gently simmer (below 110ºF) coconut milk until it's reduced to 2 cups (about 2 hours), stir often. NOTE: use a calibrated thermometer to be sure you do not go above 110ºF. 2    While this is reducing, in your food processor, finely chop the coconut meat. Add the meat to a large bowl and cover with the water. Stir often. 3    Allow to soak while your coconut milk is reducing. Drain well. In your blender add the soaked/ drained coconut meat. Add in the reduced coconut milk and honey. 4    Blend on high until smooth and creamy, this is your ice cream base. Add the ice cream base to your ice cream maker and complete the cycle. WARM RAW CHOCOLATE SAUCE (make this approximately 15 minutes before you serve) ½ cup raw organic coconut oil 1 cup raw honey ²/³ cup raw organic 100% cacao powder 5    You will need a 4 cup glass measuring jug and a small pan to make a bain marie. Place the jug in the pan and fill the pan with water to half way up the jug. It's important that no water enters the jug. Put the coconut oil into the jug. Turn stove on low and heat water to 110ºF NOTE: Use a calibrated thermometer to be sure. 6    Heat the coconut oil until melted. Whisk in the honey. Now whisk in the cacao powder and whisk until smooth. WHEN YOU ARE READY TO SERVE: G TEAM SUGGESTION: if you don’t have an ice cream maker, blend your mixture in a bowl and pour into a glass, plastic or steel bowl (something durable) and pop in freezer. Continue to check and stir every 30 min for 2-3 hours, replacing back into freezer each time. Make sure you whisk all the bumps and lumps out and you’ll have delicious ice-cream in no time! take the ice cream out of freezer, place 3 scoops in each dish. Spoon the warm raw chocolate sauce over the scoops. Allow this to set up for 1 minute. Repeat a second time and allow to set up for 1 minute. Now cover with a third layer and serve. ENJOY!! MAG 39
