Ooh baby. Custard. Amazing hot over freshly cooked cakes, or
cold in a glass. Custard. It even sounds delicious. Custard.
CUSTARD

500 ml coconut milk
2 whole free range/organic eggs
2 teaspoons vanilla bean extract
½ cup coconut flour
1 Heat milk in a saucepan with vanilla and coconut nectar and bring to almost boiling
then remove from the heat.
2 Beat the eggs and flour in a stainless steel mixing bowl until combined. Pour the hot
milk over the mixture and whisk in well.
3 Pour the whole mixture back into the saucepan and cook over a gentle heat, stirring
with a wooden spoon until it thickens and coats the back of the spoon.
4 Remove from the heat q uickly and pour back into the mixing bowl.
1 tablespoon coconut nectar
5 Whisk well to cool a little and smooth it out. If you see any lumps then strain through
a sieve.

6 Serve hot or cold and enjoy the deliciousness of custard.
7 To warm up a cold custard, place into a bowl and set it over a pan of simmering
water. Stir and heat through gently.
