RAW MACA COCONUT APPLE PROTEIN BARS
½ cup pumpkin, sunflower or squash seeds
½ cup chia seeds
By Melissa from Integrative Nutritional Therapies | Makes 9 bars
1 tablespoon coconut oil
1 Pulse seeds, pecans, maca and coconut flakes in food processor.
¹/³ cup raw pecans
2 Remove and place in a small bowl.
½ banana, mashed
½ large apple, cored and peeled
3 Using same food processor bowl, blend banana, apple, coconut oil and dates until smooth.
4 Add pulsed seeds and all remaining ingredients to the bowl.
5 Mix quickly with food processor before shaping mixture into small bars.
½ cup unsweetened shredded coconut flakes
6 Store in fridge for optimal hold of shape.

7 Freezer version: place the bars on a parchment paper lined plate and stick in the freezer for
10 minutes to firm up. Bars eaten right out of the freezer work well but will become soft in
15 minutes or so.
