In the 1980s, back when Karen Oberg of rural Dassel eliminated gluten from her diet, knowledge on the subject was limited. Oberg had grown up eating normally, but started to question her food choices when health problems arose in her early 30s. ‘I don’t eat out a lot, and if I do, it’s usually chicken and salad.’ – Karen Oberg of Dassel “My skin was itching really bad and burning, and I had a bloated feeling,” she said. “Then, my heart started beating irregularly.” She went to a doctor, but tests didn’t show anything wrong with her heart. Determined to fix the problem on her own, Karen decided to see if eliminating dairy products would help. She noticed that her stomach felt better, but the heart problem came back later on, when she switched to eating toast in the morning. “I decided to get off of wheat,” she said, explaining that she used soy flour to make bread, and stuck to eating mainly meats and vegetables. For Karen, that was the solution. “I have not had a problem since,” she said. Karen said she tries to eat organic when she can, and she generally makes meals at home. “I don’t eat out a lot, and if I do, it’s usually chicken and salad,” she said. Karen’s daughter, Janey, is also on a gluten-free diet. “Until I was 6 years old, I ate normal food,” Janey said. At that age, however, Janey began having unexplained anxiety and insomnia, which interfered with her schoolwork. She also felt constant congestion in her throat, and had eczema on her skin. Doctors weren’t able to provide an answer, so Janey’s mom took a look at the foods they were eating. She noticed that they had been consuming beef on a regular basis, so she tried eliminating it. After one week, Janey remembers her sleep quality improving drastically. As time went on, Janey found that she felt better when she avoided beef, pork, wheat, and dairy. “It’s all trial and error for me,” she said. “Some people don’t find out until they’re adults, so I’m lucky.” Neither Janey nor her mom have been tested for celiac disease or gluten sensitivity, but they know which foods make them feel better and worse. “There are lots of options nowadays, and it’s getting better and better,” Janey said, adding that she always looks for allergy labeling when grocery shopping.
