Rupes Gin Fizz

Ingredients
25ml of either Conker or Pothecary gin 25ml of Porters Perfection Vodka 25ml of fresh lemon juice Orange water , a dash of … One egg white
Method
In your shaker , add the white of one egg , follow this up with 25ml of either Conker Gin or Pothecary Gin and 25ml of Porters Perfection Vodka . To balance add 25ml of fresh lemon juice and a dash of orange water . Add a single large ice cube and shake until you can ’ t hear the clatter . Single strain into a classic coupette and garnish with a scattering of elderberry dust .

Ingredients
50ml of Conker gin 25ml of fresh lemon juice Bar spoon of blueberry jam Soda Basil leaves Agave syrup Blueberries
Method
Add a bar spoon of blueberry jam , 50ml of Conker gin , 25ml of fresh lemon juice , a few basil leaves and a dash of agave syrup to a shaker . Add plenty of ice and shake ’ til it hurts your hands . Single strain into a tiki glass over crushed ice , add a dash of soda and garnish with a bunch of basil leaves and a few fresh blueberries .

Method
In your shaker , add 50ml of Pothecary gin , 10ml of Crème de Violette , 15ml Maraschino liqueur and 15ml of fresh lemon juice . Add plenty of ice cubes to the shaker and shake ’ til your hands stick to the tin , then shake some more . Double strain into a classic Martini glass and garnish with a curl of orange peel and a sprig of lavender .
